Masala Pomfret Fry is a simple and flavorful seafood recipe made with fresh pomfret, basic Indian spices and a light coating for a crispy finish.
Clean the pomfret properly and make a few small cuts on both sides of the fish. In a bowl, mix red chilli powder, turmeric powder, coriander powder, ginger-garlic paste, lemon juice and salt. Add a little water if needed to make a thick marinade.
Apply the masala evenly over the fish, including inside the cuts. Let it rest for about 15 to 20 minutes.
Lightly coat the marinated fish with rice flour or semolina. Heat oil in a pan over medium heat and place the fish carefully in the pan.
Cook for around 5 to 7 minutes on each side, depending on the size of the fish, until the outside is golden and crisp and the fish is cooked through.
Serve hot with lemon wedges, sliced onions and your choice of rice or salad.
